Crunchy, sweet, and irresistibly moreish — these candied nuts are made by gently coating your favourite nuts in a glossy caramelised sugar mixture, then roasting them to perfection. With a hint of warmth from cinnamon and a satisfying golden crunch, they’re the perfect topping for salads, desserts, gifting, or snacking straight from the jar. Ready in minutes and dangerously easy to make!

What you will need

  • 50g raw cashew nuts
  • 2 Tbsps honey
  • 50g raw peanuts
  • 1tsp Natural Herbs & Spices Coarse Sea Salt
  • 50g raw almonds
  • 1 tsp Natural Herbs & Spices Ground Cinnamon
  • 25g sunflower seeds
  • 25g pumpkin seeds

Method

Add the nuts and seeds to a large mixing bowl.

Drizzle with the honey and season well with Natural Herbs & Spices Salt and Cinnamon.

Mix until all the nuts and seeds are thoroughly coated.

Line the basket of your air fryer with baking paper.

Take the paper out and preheat the airfryer to 160˚C.

(If you leave the paper in it will fly around)

Transfer the nuts to the paper in a single layer.

When the air fryer reaches temperature, lift the baking paper up and place it in the basket.

Air fry for 8-10 minutes.

While the nuts are cooking, prepare a second piece of baking paper double the size of the first.

Have it lying flat and ready on a work surface next to the air fryer.

As soon as the nuts are ready remove from the airfryer and tip out onto the baking paper.

Be careful as the nuts and honey are very hot.

Spread the nuts out as much as you can with a silicone spatula.

Leave them to cool, harden and set.

Break up into bits and store in an air tight container or fill little gift jars and tie with ribbon as lovely presents for the festive season or any time of year
