We've gone back to the basics and brought two dietary staples to life with this incredibly tasty Air Fried Meatballs and Sweet Potatoes dish, perfectly spiced with our aromatic Meat Seasoning and served with a delicious veggie sauce.
For the sweet potatoes:
Preheat the air fryer to 200˚C.
Poke holes in the sweet potatoes with a small sharp knife and rub them all over with olive oil and then season with a little Natural Herbs & Spices Vegetable Seasoning.
Air fry for 30 minutes, depending on their size, until tender.
For the sauce:
While the sweet potatoes are air frying - heat a drizzle of olive oil in a large frying pan. Then add the leeks and a little Natural Herbs & Spices Vegetable Seasoning. Allow the leeks to sweat until super soft and tender.
Add the garlic and cook until fragrant. Add the spinach and cook down until wilted. Season with Natural Herbs & Spices Vegetable Seasoning.
Pour in the stock and tinned tomato and bring it to a simmer.
Simmer until the sauce has reduced and the flavour has developed.
For the meatballs:
Cook the onion and garlic in a little olive oil until tender and fragrant. Allow to cool slightly.
Then combine all of the ingredients in a large bowl and mix them well and season with the Natural Herbs & Spices Meat Seasoning. Mix the seasoning into the mixture and roll into roughly 16 meatballs.
Preheat the air fryer to 200˚C.
Air fry the meatballs for 8 minutes until golden brown and cooked through.
To serve:
Slice the sweet potatoes open. Then spoon a generous amount of sauce into each one and nestle some meatballs into the sauce.
Finish with a little grated parmesan and some micro herbs.
Serve and enjoy!
