Easy-Peasy Tuna Rice Salad

Always known as the side dish… It’s now time to make rice the star of the show with this easy-peasy rice salad that tastes incredible. We all have a few cups of rice sitting in the fridge needing some spurrin.g up. Doll up your rice with beautiful vibrant veggies laced with a smooth and creamy yoghurt dressing. For the final touch ups, fine crystal dustings of our Natural Herbs and Spice Sea Salt, to marry all the flavours together. This yummy recipe is perfect for a quick lunch, that is not only healthy and nutritious but simple to prepare.   

What you will need

  • FOR THE SALAD
  • 1 cup brown rice (4 cups cooked rice)
  • ½ red onion
  • FOR THE DRESSING
  • ¼ cucumber
  • 175ml plain yoghurt
  • 1 yellow pepper
  • 2 Tbsp olive oil
  • 1 apple
  • 1 garlic clove (minced)
  • 10 Romanita tomatoes
  • 1 tsp honey
  • Natural Herbs and Spices Sea Salt and Black Pepper
  • 1Tbsp chopped fresh parsley
  • 2 tins tuna in salt water
  • Zest and juice of ½ lemon
  • ½ cup cooked sweet corn
  • Natural Herbs and Spices Sea Salt and Black Pepper

Method

Rice salads don’t have to be boring or repetitive. Use different types of rice for a different flavour, texture and aroma. For a low carb option use cauliflower or broccoli rice. We would suggest cooking the rice according to packet instructions, to insure you get light and fluffy rice ready to make the perfect salad. So, let’s get started: Cook your preferred rice according to packet instruction, we have opted for brown rice. Please note! If you are using a low carb option you will have to triple or quadruple the amount of rice used in this recipe. Once the rice is cooked allow to cool.  

Meanwhile chop fruit and veggies to your desired shapes and lengths. Pop open the tins of tuna and drain the water. In a large salad bowl mix together your cooled rice, prepared fruit and veggies as well as tuna and sweetcorn. Season will with Natural Herbs and Spices Sea Salt and Black Pepper.  Give everything a good toss around until the veggies are evenly distributed.

Now time to whip up a creamy dressing. Simply combine all the dressing ingredients into a bowl, whisk everything together until smooth and creamy. To serve, pour generous spoonfuls of the rice salad into bowls, drizzle over the creamy yoghurt dressing and enjoy.
