Cool, refreshing, and bursting with Mediterranean flavors, our Greek Watermelon Salad is the perfect balance of sweet and savory. Juicy watermelon cubes are paired with creamy feta cheese, crisp cucumber, and tangy Kalamata olives, all tossed in a light lemon and olive oil dressing. A sprinkle of fresh mint and a hint of red onion add the perfect finishing touch. Whether served as a summer side dish or a light appetizer, this vibrant salad is sure to impress.

Method

For the vinaigrette:
Combine the balsamic and oil together.
Season with Natural Herbs & Spices No Added Salt Mediterranean Seasoning
Whisk until combined, or make salad dressing in a jar and shake until emulsified.
Set aside until serving.


For the salad:
Place sliced red onion in a little bowl with some ice water.
Soak for 5 minutes and then drain and dry off.
Combine all salad ingredients on a large platter or in a shallow salad bowl.
Toss gently to mix everything together.
Just before serving, drizzle with the dressing.


Sprinkle with a little extra Mediterranean seasoning and enjoy!
