One Pot Chicken & Kale Soup

Ingredients:

1 large onion, diced
2 cloves garlic, sliced
2 large potatoes, peeled and diced into small cubes
4 sprigs fresh thyme
1 Tbsp Natural Herbs & Spices Chicken Seasoning Shaker

4 cups chicken or vegetable stock
4 cups water 
2 large free-range chicken breasts

1 bunch Tuscan style kale
2 tins butter beans, drained & rinsed 
Zest and juice of 1 large lemon 

Top tip:
For an even speedier version of this soup - use leftover cooked chicken or store bought rotisserie chicken. 

Method

Heat a drizzle of olive oil in a large pot. 
Add the onion, garlic, potatoes and thyme.
Season generously with Natural Herbs & Spices Chicken Seasoning Shaker. 
Cook until the onion softens and the spices smell fragrant. 

Pour in the stock and water. 
Bring to a very gentle simmer. 
Add the chicken breasts and poach for about 12-15 minutes, depending on their size.

Remove chicken breasts once cooked and shred. 
Check potatoes are nice and tender as well.

While the chicken is cooking, prepare the kale.
Wash well and thinly slice both the leaves and the stalks. 
The stalks add lovely texture to the soup and just need to be cut very finely. 

Add the kale, beans and lemon to the soup. 
Simmer for a few minutes until the kale is tender. 
Return the shredded chicken and taste to adjust seasoning. 

Serve in warm bowls and enjoy!
