Orzo & Hake Bake

What you will need

  • FOR THE BAKE:
  • FOR THE SALSA VERDE
  • 2 Tbsp olive oil
  • 4 shallots, thinly sliced
  • 4 cloves garlic, thinly sliced
  • 1 litre vegetable stock
  • 400g orzo pasta
  • 100g sun-dried tomatoes, roughly chopped
  • 1 small bunch fresh parsley, chopped
  • Zest of 1 lemon
  • 4 portions (± 150g each) of wild caught hake or a similar sustainable firm white fish
  • 2 tsp Natural Herbs & Spices Fish Seasoning Shaker
  • ½ cup parsley, finely chopped
  • ½ cup basil, finely chopped
  • 1 clove garlic, finely grated
  • 2 Tbsp capers, roughly chopped
  • 100ml olive oil
  • 50ml lemon juice
  • ½ tsp Natural Herbs & Spices Sea Salt
  • Lemon wedges, to serve

Method

Combine all the salsa verde ingredients and mix well.

Keep in the fridge until serving.

 

Preheat oven to 180˚C.

 

Heat olive oil in an oven safe pan with a lid over medium heat.

Add shallots and sauté until tender.

Add the garlic and cook until fragrant.

Pour in the vegetable stock and then sprinkle in the orzo, sun-dried tomatoes, parsley and lemon zest.

Stir briefly to mix.

 

Bring to a simmer, and cook gently, uncovered for about 10-15 minutes.

Stir occasionally, making sure the orzo doesn’t stick to the bottom of the pan.

Switch off the heat and taste to adjust seasoning.

If your stock is not sufficiently salty add additional seasoning using the Natural Herbs & Spices Fish Seasoning Shaker.

 

Nestle fish in a single layer into the orzo mixture.

Drizzle each piece with a little olive oil and season well with Natural Herbs & Spices Fish Seasoning Shaker.

 

Place the lid on the pan and bake for ± 12 minutes, or until the fish is cooked through.

The cook time will vary depending on the thickness of the fish fillets.

 

Serve the orzo and hake bake straight out of the pan family style.

 

Spoon a generous amount of salsa verde over each serving.

Finish with a squeeze of fresh lemon juice and enjoy!
