Start your day with a nostalgic nod to your favorite childhood sandwich, reimagined into a nutritious and delicious breakfast. Our PB & J Overnight Oats combine the creamy richness of peanut butter with the sweet burst of fresh berries and the hearty goodness of oats. This easy, make-ahead recipe is perfect for busy mornings, giving you a protein-packed, fiber-rich meal that will keep you satisfied and energized all day long.

What you will need

  • 250g frozen mixed berries
  • 50ml water
  • 1 Tbsp honey
  • 100g rolled oats
  • 100g plain yoghurt / vanilla yoghurt or coconut yoghurt if you would like to keep it vegan
  • 1 Tbsp peanut butter, no added salt or sugar
  • 1 Tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp Natural Herbs & Spices Ground Cinnamon
  • A little grind of Natural Herbs & Spices Himalayan Pink Salt
  • 200ml oat milk / milk of choice
  • Seasonal berries & Peanut Butter, to Garnish

Method

Place frozen berries in a small saucepan with the water and honey.

Bring to a simmer and cook over medium heat until the berries are very soft and break down.

Use a potato masher to crush them thoroughly.

Simmer for a further few minutes until thickened and then remove from the heat and scrape into a bowl.

Place in the fridge to cool.

Place the oats in a medium sized bowl.

Add the yoghurt, peanut butter, honey and vanilla.

Season with Natural Herbs & Spices Cinnamon and Salt.

Pour in the oat milk and mix everything together well.

Divide the mixture between two tumblers or glass jars with lids to take to work / school.

Dollop a few spoonfuls of berry coulis into each glass, saving the rest for garnish.

Place in the fridge and leave the oats to soak overnight before eating.

Remove from the fridge and top with fresh berries, berry coulis and an extra dollop of peanut butter.

Enjoy at home or on the go!

Store in the fridge for up to 3 days.
