Stone Fruit Caprese Salad

This year, we're serving seasonal fruit and veg in easy, healthy and tasty style!  Made with a mix of our summer favourites, this sensational Stone Fruit Caprese Salad is loaded with natural nutrients and enhanced with our top-quality Natural Herbs & Spices Basil and Everyday Seasoning.

What you will need

  • 2 yellow peaches, sliced
  • 2 white nectarines, sliced
  • 1 cup cherries, pitted and halved
  • FOR THE VINAIGRETTE
  • ½ cup basil leaves, packed
  • 1 tsp Dijon mustard
  • 300g fresh mozzarella
  • ½ tsp Natural Herbs & Spices Dried Basil
  • 1 Tbsp olive oil
  • ½ tsp Natural Herbs & Spices Everyday Seasoning
  • 2 tsp honey
  • 3 Tbsp white balsamic vinegar
  • 2 tsp white balsamic vinegar
  • 3 Tbsp olive oil
  • ½ tsp Natural Herbs & Spices Dried Basil

Method

Make the vinaigrette by combining all the ingredients in a small bowl. Then whisk to emulsify and set it aside.

Then prepare the fruit and drain the mozzarella. Leave the mozzarella on a clean dish cloth to draw out excess moisture. 

Place the sliced fruit in a bowl and drizzle with the olive oil, honey, white balsamic and the Natural Herbs & Spices Dried Basil. Toss to combine and allow to marinade and macerate for 10-15 minutes.

Then spoon the marinated fruit onto a serving platter. Tear the mozzarella into chunks and arrange them in between the fruit. Tuck and scatter the fresh basil leaves around the rest of the ingredients.

Scatter a little Natural Herbs & Spices Everyday Seasoning over the salad and drizzle with vinaigrette.
