Crazy weekday mornings when there just doesn’t seem to be time to make a nutritious breakfast… Sound familiar? No-cook overnight oats is the answer. Variations for overnight oats are pretty much endless. Use dairy milk, almond, oat or soya milk to soak the oats overnight and top it off with any fruits and nuts that you fancy. Want it extra rich? Stir in a nut butter. We decided to go tropical with fragrant coconut milk and fruits that smack of sunny warm climes.

What you will need

  • 125 ml rolled oats (not instant oats)
  • 160 ml reduced fat coconut milk (or half coconut, half almond)
  • 15 ml chia seeds
  • 30 ml brown sugar (or non-nutritive sweetener of choice)
  • 1 ml (pinch) salt
  • 2.5ml Natural Herbs & Spices Ground Ginger
  • Pineapple
  • Guava
  • Granadilla
  • Dried coconut shavings

Method

Mix together all the ingredients (except the toppings) in a glass jar. Cover and place in fridge overnight. Next morning give it a stir and top with tropical fruit.
