This recipe for twice-baked sweet potatoes is a wonderful way to pack tons of flavour in a tasty, gluten-free and simple meal. These delicious sweet potatoes will be a perfect meal for the Easter holidays or any family gathering. When you decide to enjoy these sweet potatoes you are promised to have any explosion of flavour from our Everyday seasoning, teamed with the aromatic spring onion and tangy cheese. If you like twice-baked potatoes you definitely have to give this recipe a try.
Start off by preheating the oven to 200°C. Prick the sweet potatoes all over with a fork, place potatoes on a baking tray and bake for 1 hr or until soft and tender.
Once your potatoes are cooked, allow the potatoes to cool enough for you to cut them lengthwise and scoop out the flesh. Then, in a large bowl with the sweet potato flesh add in cheese, Natural Herbs & Spices Everyday seasoning and spring onion. Give everything a good mix and spoon back the mixture into the potato skins. Using the back of a spoon make a well in the center of the sweet potatoes and place back on the baking tray. Carefully crack in eggs in the center of each potato and season the eggs well with the Natural Herbs & Spices Everyday seasoning.
Back into the oven the potatoes go, bake until eggs are cooked to your desire and the sweet potato is lightly golden brown. For further enjoyment, serve the potatoes with an extra sprinkling of spring onion.
