3 Ways with Chicken Strips: 1 - Low Carb Chicken Gyros

Chicken breasts are low in fat, high in protein and incredibly versatile – especially when you slice them! Here are three quick ways with chicken strips.

For the first variation - we've taken inspiration from the Greek street food favourite, gyros. But instead of wrapping all that chicken deliciousness in pita we cut the carbs, and use large butter lettuce leaves instead.

What you will need

  • 4 skinless free range chicken breasts
  • FOR SERVING
  • 3 fat garlic cloves, finely minced
  • Large butter lettuce leaves
  • Natural Herbs & Spices Rosemary & Lemon
  • Sliced red onion
  • 6 Tbsp olive oil
  • Sliced cucumber
  • Juice of half a lemon
  • Sliced baby tomatatoes
  • FOR SERVING
  • Hummus
  • Tzatziki
  • Lemon wedges

Method

Slice the chicken breast into strips. then place the strips in a large flat bowl with half the olive oil and all the minced garlic. Dust them with Natural Herbs & Spices Rosemary & Lemon Salt Seasoning and toss to combine. Cover and marinate for half an hour. Heat the rest of the olive oil in a non-stick pan and fry the chicken in batches until golden and just cooked through. (Chicken breast is the least fatty part of a chicken, so take care not to overcook it as it will dry out very quickly.)

Towards the end of cooking, deglaze the pan by squeezing over the juice of half a lemon. Taste and adjust salt levels as needed with more of our Natural Herbs & Spices Rosemary & Lemon Salt Seasoning. Serve right away with the rest of the ingredients and let everyone roll themselves their perfect low-carb chicken gyro.
