Apple Pudding

Sweet stewed apples with a hint of warm spices, lying beneath your choice of rolled oats or whole wheat bread. Both toppings are flavoured with butter, spices and everything nice.  A luscious pudding that also gives you a boost during this cold winter weather.  A dollop of fresh cream or yoghurt takes this winter dessert to a whole new level.

What you will need

  • FOR THE STEWED APPLES
  • FOR THE BREAD TOPPING (OPTION 1)
  • 600g apples, peeled and roughly chopped
  • 4 slices whole wheat bread
  • 1 Tbsp lemon juice
  • 10g salted butter
  • ¼ cup water
  • Natural Herbs and Spices Cinnamon (for dusting)
  • 1 tsp Natural Herbs and Spices Ground Cinnamon
  • 4 tsp coconut sugar or dark brown sugar
  • ½ tsp Natural Herbs and Spice Ground Ginger
  • FOR THE OATS TOPPING (OPTION 2)
  • ¼ tsp Natural Herbs and Spices Ground Nutmeg
  • ½ cup rolled oats
  • 2-4 Tbsp honey
  • 25g salted butter, melted
  • 1 tsp vanilla essence
  • ½ tsp Natural Herbs and Spices Ground Cinnamon
  • 1 sachet Natural Herbs and Spices Balance Smoothie Booster
  • 4 tsp honey

Method

Start off by preheating the oven to 180°C. Then place the apples, lemon juice and water into a small pot, allow the apples to stew for 5-10 minutes until soft.

Meanwhile, prepare the topping for the pudding, for the bread topping, butter bread and cut into circles. Dust with natural herbs and spices cinnamon and sprinkle with sugar on each slice. For the oats topping, mix together oats, butter, Natural Herbs and Spices Cinnamon and honey.

Now, Stir in Natural Herbs and Spices Cinnamon, Ginger, Nutmeg as well as honey and vanilla into the stewed apples. You can remove the apples from the heat. Then, sprinkle Natural Herbs and Spices Balance Smoothie Booster at the bottom of each ramekin. Now, divided the flavoursome apple stew between the ramekins. Layer in your bread if you are using that topping or sprinkle over you oats if you are using that topping.

You can now place apple pudding onto a baking tray and into the oven they go for 30 minutes or until the tops are crispy and golden brown. We suggest letting the puddings cool down slightly before serving as they are extremely hot.

Serve your puddings with a dollop of fresh cream or plain yoghurt. Enjoy!
